In the UK, none, except the card part of your licence and maybe your breakdown membership but that’s usually a credit card-sized thing in your wallet as well.
Never carry the car’s registration documents, or insurance details in the car. The only people who are legally entitled to ask for these documents are the Police, and they will know from their computer if you’re insured or not.
These things represent a security risk if the car gets stolen. Apart from anything else the thief will have your address as well as your car. While you’re on the phone to the cops reporting your car’s been stolen, the tea-leaf’s already outside your house loading your worldly goods into your car.

As previously answered, don’t keep anything in your car, as they are valuable to a theif.
If you are pulled over, a police officer will issue a producer. You must produce your docuements at a nominated police station within 7 days from midnight that night.

Don’t keep your insurance certificate, logbook or driving licence in the car – they are invaluable to a thief. Even the police say not to do this, if they want to see your documents you can produce them at a police station later.
Personally I have a piece of paper with the name, policy number and contact details of my insurers on it but nothing else, not even my name.
The other answerers seem to be thinking of American requirements – I believe you’re in the UK.

The two documents that are required to kept in the vehicle at all times are the vehicle registration, and a valid insurance card. It is also required that the car’s windshield, or the rear license plate, contain an up-to-date registration sticker; for example, it should say something like Jan 10. In your wallet you should carry your driver’s license at all times. Everything else is optional.

It is up to you, but if you photostat your insurance and registration documents, and carry your driving licence in your wallet or purse, they will show that you are covered.
Some people have said they carry nothing and the Police will just have to wait to see them.
The Police are under NO obligation to issue a ‘HORT1′ (a producer)
YOU must prove to the officer, if asked, at the time of being stopped that you have valid insurance, driving licence and MOT.
The Police have the power to seize your vehicle (at a cost to you) until you can show that you are legal to drive on the road.
The police do have access to a national database, and they MAY check your details, however, if for some reason they fail to com firm your details, (ie new insurance, just passed MOT) they will seize your vehicle, until YOU prove otherwise

just your insurance, registration and the vehicle info book(the book that shows you how to change a flat tire.) That’s all I would leave in it, Not anything with personnal info on it like your driver’s lic. receipt. Oh, you can leave the breakdown info in it just in case you breakdown.

The two documents you should carry in the car at all times are your registration and an up to date insurance card. Assuming that you always have your wallet (purse) with your driver license. this makes up the three mandatory documents. Anything wlse is just nice to have.
